I hemmed and hawed over this post. Do I share my beloved favorite pie recipes with the world, or do I hoard the glory of delicious, mouth-watering pies to myself? These recipes are super fast and easy, and in a pinch you can whip out a dessert in a matter of 45 minutes that is impressive and YUMMY! The trick is to always have pie crusts in your freezer if you are not the homemade crust type. So here they are…… don’t love them and leave me now……… (whimper, whimper)
Fudge Pie
1 stick melted butter
¼ cup cocoa
2 eggs
1 cup sugar
¼ cup flour
1 teaspoon vanilla
Mix all in a bowl and pour into pie shell. Bake at 350 degrees. Check after 30 minutes. Pull out when the middle of pie is set.
Chocolate Chip Pie
1 stick melted butter 1 large egg or two small ½ cup flour ½ cup sugar ½ cup brown sugar ½ teaspoon vanilla ½ cup to 1 cup chocolate chips (mini’s are nice) or any other kind of “chip” you like ½ cup walnuts (optional)Mix all together in a bowl and pour into pie shell. Bake at 325 degrees. Check after 40 minutes. Pull out when the middle of pie is set.
There you have it. Two of my best “ace’s in the hole,” that will make you look like a champ. I don’t usually have too many instructions with my recipes, so if something is unclear to you, leave me a message and I’ll try to explain further.
A very special someone is going to be receiving a fudge pie in the mail this week. For the first time ever, she was brave enough to submit one of her written works to a magazine for publication. So proud of you! I finally found one box that will fit a pie. Need to find more…. Who knows, maybe sometime I will want to congratulate and surprise YOU! My kids are learning to make pies, so I’ll have to print these out and have them try them. We’re using Alton Brown’s crust recipe which is super easy for kids to make. Thanks for sharing your “secrets.”

Now that I am done digressing:
My familys favorite pie is something SO easy and we call it “Oreo Pie”:
You get a pre-made chocolate pie crust.
Make one pkg each of Vanilla and Chocolate Pudding.
Layer the pudding alternating between flavors.
Crumble Oreo Cookies on top and then freeze for 20 minutes to harden up a bit.
Amazing…easy…and costs less than $5, if you just grab a snack pack of Oreo cookies at the register
…did I mention that I love you???

That chocolate chip pie sounds yummy!
I don’t make pies often. The only one I make quite frequently is not a dessert and it’s Spinach Pie. It’s really good! Frozen chopped spinach thawed and drained well. Mix in shredded cheese (I use sharp cheddar alone or sharp cheddar & mozzarella), about 1/2 cup of chopped onions (more if you like), seasonings (salt, pepper, garlic powder). Optional additions include chopped green peppers or you can try using fresh spinach leaves.) Put one pie crust on the bottom of a pie dish, fill with mixture, spread evenly and cover with other pie crust.
I sometimes saute the veggies for a few minutes, but it’s not necessary. They bake up nicely.
Put in oven at 350 F for about 30-45 minutes depending on oven…or bake until crust is golden brown. I usually spray the edge of my crust with nonstick spray.
This is a family recipe so if I see it like this all over the place then I know someone stole it from you!
I’ve seen other versions around, but not like this as far as I know.

Oh, I need to try those!! Lucky for me I happen to have 2 homemade pie crusts in the freezer (thank you Pioneer Woman!) They don’t get used very often b/c the only I pie I make is Charlie Brown Pie, which is not really a pie at all.

My mom used to make Hershey Bar pies – ohhhhhh, and lemon meringue – ohhhh!
I want pie I want pie I want pie – *laughing * -maybe I’ll get some pie instead of cake for my b’day – GMR and I go to this place in Waynesville and I order my fave cake: Carrot, or coconut, — the pieces of cake are HUGE and so moist and good….since it’s just the two of us, we don’t want to have an entire cake around….. but PIE , now I have pie on the brain.
I do not usually make pies – I used to when the kids were little and they loved the chocolate chip pie (the recipe I used was from the back of the toll house chocolate chips). We’ve always had a weight problem here so I don’t bake often. Not that I don’t want it……. and I’ve always wondered – so many of the people I know bake often and they are not as overweight as I am or overweight at all. Their families don’t have issues either…. I hate my metabolism…… but it is what it is…..

Oh my…those recipes look sinful!!! I used to love baking(not cooking)and did it all the time, but I don’t do it much anymore as my children are adults and gone. You see I don’t want to eat it all myself… :0)
